Sweet Summer-y Wedge Salad
What to do
- Slice the romaine hearts in half length-wise, then chop in half again.
- Arrange hearts on a serving platter, and sprinkle with Love Beets Beetroot Wedges, blueberries, raspberries, chopped pecans, and crumbled goat cheese.
- Drizzle with desired amount of Pomegranate Balsamic Vinaigrette and enjoy right away!
What you’ll Need
2 romaine hearts
1 package Love Beets Beetroot Wedges – Balsamic
100 g fresh blueberries, washed
125 g fresh strawberries, washed
35 g raw pecans, chopped
30 g goat cheese crumbles
For the dressing
4 tablespoons olive oil
1 tablespoon balsamic vinegar
1 el grapefruit syrup
3 el fresh lemon juice
pinch of sea salt
